Back to life, back to reality!

Ever since Chase was born, (okay, ever since I was about six months preggo with Chase) my wonderful and selfless husband has been doing the grocery shopping for our family. I know, I know. I hang my head in shame. He also does a lot of the laundry and always helps me cook dinner.

Anyway, now that you know I am a terrible wife/housekeeper, here is what this post is really about . . .
Ryan is doing another interim role for Starbucks. He no longer has one store, he has 13 stores (13 STORES!!!) to run for the next 10 weeks. If he does well, the job could be his. So, I figured it's about time I take the grocery shopping back and relieve him of this chore. I do have to say, he never once complained about it and didn't even ask me to start doing it. I'm pretty sure he would have happily continued to do it for me. But, I want him to be able to relax when he gets home and not have to go on the weekends. So, I am in the process of coming up with a list of 30 meals, complete with all ingredients listed. That way, I can pick out the meals I want for the week and head to the grocery. Sounds easy enough, right?

Not so fast!

I am having trouble coming up with 30 meals. Truth be told I think we rotate through the same 7-10 meals each week. Ewww. I'm in a huge rut.

This is the part where you all come in! Please post your favorite (easy-ish) meal for me so I can add it to my list. Once the list is completed, I'll post it for ya'll and you can copy it for your own enjoyment! You scratch my back, I'll scratch yours.

enchiladas, baked spaghetti (creamy chicken or regular) meatloaf/meatballs, crock pot roast (either traditional with potatoes/carrots or with a jar of banana pepper rings then shredded up for burrito filling), stir fry, marinaded grilled chicken breasts, chili, salsa chicken, cheesy potatoes & ham, burgers of all varieties and flavors (SPRING! SUMMER! YAY!)tacos, tostadas, fajitas, chicken & rice, soup.

These are some of our rotational items. But I think we do usually get stuck in a rut too - it's too easy for me to just throw something on the grill or in the crock pot and make some baked sweet potatoes and a salad. I'm lazy like that.

I'm in a rut too! Here are some of our family favorites. Let me know if you want the recipes (I want yours!):
- Meatloaf
- Parmesan Crusted Chicken
- Shredded Beef over Noodles
- Goulash
- Soup (Potato or Chicken Noodle)
- Chicken Lasagna

I'm always waxing and waning in my cooking desires. Fact of life, I suppose!

Here's what's on our usual rotation:
* tacos or nachos(usually with leftover meat from the night before)
* quiche (or some other egg-based dinner at least once a week)
* spaghetti
* hamburgers or chicken burgers
* homemade fish sticks (breaded and fried)
* homemade chicken nuggets
* beef or pork roast in crockpot with mashed potatoes or sweet potato casserole
* cheesy ham casserole (the only casserole my kids will eat!)
* homemade pizza

So fun seeing what other people are cooking. That's always inspiring!

I challenge myself to try a new recipe 2x a month. Even if the meals don't end up in my regular rotation, it breaks up the rut! maybe you already do this, but I keep a running notebook page of all the meals I've made (there's probably about 40 meals on there) and then when shopping/meal planning day comes, I peruse my list and pick from there. (not that I don't often stick to the same) :)
one of my easiest things is to make a big batch of meatballs (or you can buy a bag) and stick them in the freezer. they're so versatile and easy to thaw. I make mashed potatoes and top them with meatballs & brown gravy or warm the meatballs in bbq sauce and serve with baked sweet potatoes. I also make a lot of wraps - have tortillas on hand and fill them with lettuce, tomato, chicken & ranch dressing or scrambled eggs, sausage & salsa. hope you can use some of the ideas everyone has given!
